Grilled Asparagus

Serves 8

2 pounds fresh asparagus spears
3 to 4 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
2 teaspoons lemon zest
Coarse salt (sea or kosher) and freshly ground black pepper, to taste
1/2 cup freshly and finely grated Parmigiano-Reggiano

1. Slice or snap the woody ends off the asparagus spears and transfer to a rimmed sheet pan. Drizzle the olive oil and lemon juice over the asparagus and season with the lemon zest, salt, and pepper. Toss with tongs to coat evenly.

2. Light your Angara grill and heat to high. Brush and oil the grill grates.

3. Arrange the asparagus spears directly on the grill grates perpendicular to the rungs. Grill for 6 to 8 minutes or until tender-crisp, depending on the thickness of the spears, turning as needed with tongs. Transfer to a platter or plates and dust with the Parmigiano-Reggiano.
